These events happen but once a year, we have no choice but to get older but to be wiser also is a fantastic feeling. No..No...I am not talking about myself, I just get older each year as it is mandatory, growing up is optional...!!!
I have known her for little over 4 years, feels more like 10 years, she is a rare breed of people who are not born by chance but are destined to be born. She is a friend of mine who has supported and stood by me in my bad times as well as good times. This recipe is dedicated to her.
Ingredients:

8 eggs

2 large finely chopped onion

Salt to taste

4 tbsp Veg oil

6 finely chopped garlic flakes

1” Ginger grated
-
1 tsp cumin pwdr
-
1 tsp coriander powder
-
Pinch turmeric
-
2 tbsp red chilli powder

2 large finely chopped tomatoes
-
Half a bunch fresh coriander leaves
-
1 cup unflavored yogurt
-
1 tbsp garam masala
Method:
Hard boil eggs and leave to cool. Then peel and keep aside.
Heat oil in skillet; add the onions, garlic and ginger, stirring constantly for 7 to 8 minutess till the onions are soft and golden.
Reduce heat to low, add cumin, coriander, turmeric, and chilli powder, stir for a minute.
Stir in the tomatoes, a little fresh coriander, plain yogurt and salt.
Cook few minutes.
(I added a little 1/2 and 1/2 cream at this point to give it some richness).
Then add eggs, sprinkle with garam masala and fresh coriander leaves.

Doc it goes very well with Malbari parotha or with plain rice!
